Raw Kale Salad

This raw salad highlights one of my FAVORITE ingredients, kale! Also, radicchio, beets, and a sherry vinaigrette!

You will need:
1 small bunch of kale, wash and remove the stems
1/2 head of radicchio
2 red beets, peeled and cut very thin
2 golden beets, peeled and cut very thin
6 small carrots, cut into strips
1/2 cup toasted pecans
1/4 cup toasted pumpkin seeds
4 tablespoons olive oil
2 tablespoons sherry vinegar
salt and pepper

  1. Place the kale in a large bowl and gently give it a little massage, this will break up the fibers and makes it easier to eat.
  2. Mix oil, vinegar, salt & pepper and set aside.
  3. Add remaining ingredients to your kale.
  4. Top with vinaigrette and toss well.

Always massage your kale leaves and be sure to cut out the tough stems.
