Watermelon Bites with Prosciutto, Olives and Basil

This is not an intuitive flavor pairing, but let me tell you.. it’s FABULOUS! Salty, savory, sweet, umami! Such an awesome little summer bite!

Makes 24

1/10th of a watermelon, cut into 1″x1″ cubes
12 thin slices of prosciutto
24 fresh basil leaves
24 best quality black olives
pinch of red chili flakes
olive oil

  1. Start by cutting the ham in half lengthwise.
  2. Wrap each watermelon cube in a piece of prosciutto and place on a platter.
  3. Top each one with a basil leaf, black olive, and a sprinkle of chili.
  4. Drizzle with a small amount olive oil and serve.

You can spear each bite with a toothpick if you’d like.
