Pineapple Shrub with Cranberry Ice Cubes

This fresh and festive party drink, presented by our friends at Colonial Williamsburg, is perfect for the holidays and beyond. In colonial times a shrub was usually made with vinegar and had a bit of a bite, but this version is fruity and delish. This is a non-alcoholic drink, but you could certainly spike it with dark rum or brandy!

You will need:
1 16 ounce can whole-berry cranberries
2 cups sweetened cranberry juice
24 ounces soda water
1 quart pineapple juice, fresh if you can find
2 limes, thinly sliced

  1. For the ice, place the cranberries and juice in a blender and puree.
  2. Pour into ice cube trays and freeze overnight.
  3. For the shrubs, pour 2 ounces soda water into each glass and top with pineapple juice.
  4. Add 1-2 cranberry cubes, garnish with lime and serve.

This drink is easily spikeable! Just add brandy or dark rum!
