I often get asked what's my favorite ingredients. One of them are lemons, just love the way that taste and make other food stands out. This salsa is amazing with grilled chicken or even some grilled white fish. The salty capers and olives together with the sour lemon is such a great mix. Try it and you will be hooked.

Serves 4

2 lemons, cut in slices, without rind
20 green olives
2 tablespoons capers
1/2 teaspoon sugar
2 tablespoons olive oil
Grated lemon zest, from 1/2 lemon
1/4 teaspoon salt

  1. Place lemon slices, olives and capers in a bowl.
  2. Add sugar and let the mixture stand 15 minutes.
  3. Add olive oil, lemon zest and salt
