Today is saturday and saturday is cakeday. I love baking cakes on saturdays, and today I'm baking this coconut cake again. It's so moist and good with a wonderful coconut smell. You should really try it. I like to bake it in individual small bunt pans. And if you decorate with a sugar cookie it looks like a cake good enough for Marie Antoinette.

Makes 4 small cakes or 1 large

Serves 8

100 g butter, melted
1/3 cup sugar
1 cup plain flour
1/2 teaspoon baking powder
1/2 cup full fat coconut milk
1/4 cup milk
1 teaspoon vanilla
1/4 cup shaved coconut

  1. Preheat oven to 180C, 350F.
  2. Mix together butter, sugar, flour, baking powder, coconut milk, milk, vanilla and shaved coconut in a baking bowl.
  3. Divide the mixture between 4 small greased bunt pans or 1 large.
  4. Bake for about 18 minutes, or until set and golden.
  5. About 40-45 minutes for a large one.
  6. Cool.
  7. Turn upside down and serve with a sugar cookie star on top and a little powder sugar dusting.
