French Toast with Pineapple Salsa

Serves 4

1 pineapple

1/3 cup chopped fresh mint

2 tablespoons honey

grated peel and juice from 1 lime

1/4 cup all-purpose flour

3/4 cup whole milk

1 egg

pinch of salt

1 teaspoon sugar

4 thick slices country style bread, cut into thick strips

1.start with the salsa. Peel and chop the pineapple and place in a bowl.

2.Add mint, honey and lime, mix well. Set aside.

3.In a bowl mix flour, milk, egg, salt and sugar.

4.Melt the butter in a pan and dip the bread in the flour mixture. Fry in butter until golden.

5.Plate and top with a little sugar and cinnamon, cottage cheese and the pineapple salsa.

The pineapple salsa is also great with grilled chicken or on ice cream.
