Makes 8 large cookies


2 sticks butter, soft

¾ cup light brown sugar

¾ cup sugar

2 large eggs

1 teaspoon vanilla

2 cups rolled oats

1½ cups all purpose flour

1 teaspoon baking powder

1 cup shredded coconut

2 cups raisins

  1. Preheat oven to 380°F.
  2. In a large bowl, beat butter and sugars until light and creamy.
  3. Add the eggs and vanilla and beat it well into the mixture.
  4. Add oats, flour, baking powder, coconut, and raisins and mix until combined.
  5. Place 2 tablespoons of dough on a baking sheet covered with parchment paper. Give them plenty of room, as they grow while baking.
  6. Bake until golden, about 12–14 minutes.
  7. Cool on a wire rack.
