Especially sinful when filled with pure ganache.
MAKES ABOUT 20 PIES
Pies:
1/2 cup butter
1 cup brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
1 teaspoon vanilla
1 large egg
1/2 cup cocoa powder
2 1/3 cups All-Purpose Flour
1 cup milk
Ganache:
1⁄2 cup heavy cream
4 oz dark chocolate, chopped
- Preheat oven to 350°F.
- In a large bowl beat butter and sugar until creamy.
- Add the egg and mix well.
- Add milk, vanilla, flour, and cocoa and mix until you have a smooth dough.
- Drop 2-teaspoon mounds of the dough onto parchment-lined baking trays.
- Bake until firm to the touch, about 11 to 12 minutes.
- Cool on a wire rack.
- Place cream and chocolate in a double boiler and melt together.
- Once smooth, remove from heat and cool until it has a creamy consistency.
- Place some ganache between two pies.
